Smoked Oysters Rockefeller Dip

Bring some luxury to your table with this craveable, shareable appetizer inspired by the classic dish Oysters Rockefeller. Look for tins of smoked oysters in the canned fish aisle, then stock up on your choice of crackers, toasted baguette slices, or crisp vegetables to serve  this flavorful dip.

Preparation Time: 25 minutes
Makes 6 servings

Ingredients:

2 (3 ounce) tins smoked oysters

1 (10 ounce) package frozen spinach, thawed, drained

1 (5.3 ounce) container plain Greek yogurt

2 ½ tablespoons mayonnaise

3 cloves garlic, finely minced

½ tablespoon lemon juice

¼ cup grated parmesan cheese, divided

¼ cup grated mozzarella cheese, divided

1 ½ tablespoons panko breadcrumbs

Serving Pairings (as desired):

  • Hot sauce (i.e., Tabasco)

  • Crackers, toasted baguette slices, or crostini chips

  • Crispy vegetables (i.e., carrots, celery, bell peppers, or endive)


Instructions:

  1. Preheat an air fryer or oven to 400 F. 

  2. Drain the tins of smoked oysters and coarsely chop the oysters into small pieces. Add to a large mixing bowl.

  3. Squeeze the thawed spinach to drain excess water. Add to the mixing bowl along with the plain Greek yogurt, mayonnaise, garlic, and lemon juice. Reserve 2 tablespoons each of the grated parmesan and mozzarella cheese for topping, and add the remaining amount to the mixing bowl.

  4. Mix ingredients together to create a thick mixture. Transfer it to a small oven-safe baking dish, top with the remaining parmesan and mozzarella cheeses, followed by the panko breadcrumbs.

  5. Bake in the air fryer for 10-12 minutes, until the topping is lightly browned and toasted. Alternatively, bake in the preheated oven for 15 minutes, or until the dip is heated through.

  6. Serve hot with recommended serving pairings, as desired.

Notes:

  • May substitute 1 tablespoon pre-chopped minced garlic for 3 cloves garlic.
